Ingredients

For the batter

  • 1 can (395 g / 14 oz) sweetened condensed milk
  • 1 can (200 ml / 7 oz) coconut milk
  • 2 cups whole milk (480 ml)
  • 3 large eggs
  • 3 tablespoons unsalted butter, melted
  • 1 cup all-purpose flour (125 g)
  • ½ cup granulated sugar (100 g)
  • ½ cup grated Parmesan cheese (50 g)
  • 1 cup sweetened shredded coconut (90–100 g)
  • 1 teaspoon vanilla extract
  • Pinch of salt

For greasing the pan

  • Butter
  • Flour or shredded coconut

Equipment

  • 9-inch (23 cm) round cake pan or bundt pan
  • Oven

Instructions

Step 1: Prepare the oven

  • Preheat your oven to 350°F (175°C).
  • Grease the cake pan with butter and dust lightly with flour or shredded coconut.

Step 2: Blend the wet ingredients

Add to a blender:

  • Sweetened condensed milk
  • Coconut milk
  • Whole milk
  • Eggs
  • Melted butter
  • Vanilla extract

Blend for about 1 minute until smooth.

Step 3: Add the dry ingredients

Add:

  • Flour
  • Sugar
  • Parmesan cheese
  • Salt

Blend for another 30–60 seconds.

Finally, stir or pulse in the shredded coconut just enough to combine.

Step 4: Bake

  • Pour the batter into the prepared pan.
  • Bake for 50–60 minutes, or until:
    • the top is golden brown,
    • the edges are set,
    • and a toothpick inserted near the center comes out mostly clean (a few moist crumbs are fine because the cake has a custard-like center).

Step 5: Cool

  • Let the cake cool in the pan for 20 minutes.
  • Carefully unmold onto a serving plate.
  • Cool completely before slicing.

Optional Coconut Glaze

Ingredients

  • 1 cup powdered sugar
  • 2–3 tablespoons coconut milk
  • ½ teaspoon vanilla extract
  • Toasted coconut for garnish

Directions

  1. Whisk together the powdered sugar, coconut milk, and vanilla until smooth.
  2. Drizzle over the cooled cake.
  3. Sprinkle with toasted coconut.
